I am new to making biodiesel and have a question. Since the oil is lighter than water, and the water settles to the bottom after washing, how can the water be expected to evaporate from finished biodiesel. Wouldn't is just sink to the bottom?

First be sure to separate the as much water as possible from the BD using a stand pipe drain from above the water. Don't forget to drain water in drain before pumping into drying tank.
The way I dry is pump from the bottom of the tank and diffuse into a curtain of oil. I use a small fan to blow around the oil and move the water vapor out and blow in dryer air. I can speed the process by adding heat.
