I would go with a good 2 tank system. I live in FL and I run 2 tanks on my 1996 Burban with a 6.5 in it. Even more important if you use it for work, with a 2 tank system, properly designed, you should not have any problems. IF you DO have problems, with 2 tanks you can always switch to the diesel side and run until you can get the veg side fixed. With a step van you should have lots of room inside, if I were you I'd use a 15, 30 or 55 gal plastic drum for a WVO tank. Free (or cheap) from local car or truck washes.
1985 Mercedes 300D, sold, Heat exchanger and injector line heaters, all single tank. 1997 E300D Benz using 50% diesel, 50% VO single tank

i have an 89 f-350 former uhaul box that i run on grease. it is nice because i keep a 30 gallon drum in the box for a second tank. i have cut my diesel consumption in that truck down to 10% of what i used to use.

I haven't decided exactly how to do mine yet, I think mostly planned on collection, but maybe some long trips to get new cars and such.
